Why is it illegal to put money in other people:s parking meters?

Have you ever - or would you ever consider - run(ning) up to a meter just ahead of a meter maid/man and inserted coins to stave off a parking ticket?

I'm not sure that it is illegal to do that. In most places, however, metered parking is also limited parking. If the sign says "one hour metered parking," or some such thing, that usually means that you cannot park there for more than one hour. And that, of course, means that "feeding the meter" is illegal, even if it's your own car at the meter. (Well, literally, it's not the feeding that's the violation, it's the parking beyond the stated time limit.)

Well, don't try it in here in Cincinnati. Or maybe you should. You might get arrested, but they'll honor you at City Hall after you die.
